Our Story

We, at Cofaidh Ceilidh HQ, have invested a huge amount of time in getting our coffee and barrels to match up in flavour.

We are careful in identifying Fairtrade beans for their intensity and flavours, selected to compliment the whisky flavours that are picked up and enhanced during the maturation process in our barrels.

This then leads to timing tests to ensure that the beans soak up all of the flavours and aromas of the chosen Whiskies. Finally, we refined the roasting timings until we had a flavour and consistency that we were happy with and most importantly that we love. This obviously meant we had to drink a lot of coffee. However, drinking coffee is an enjoyable chore for us lovers of cupped lightning and this venture is well worth the time spent awake at night (when I am writing this!)

A bit about us

Our interest in coffee began as a typical student/worker, burning the candle at both ends. Whether this being video editing/assignment deadlines and needing the boost through the night or going out with friends until the early hours of the morning and requiring that hit to get the daily grind started on the commute (pun not intended).

Whisky has always been a part of our lives as Dad enjoys a tipple of Whisky every so often. As kids we were taken around distilleries and have always been fascinated by the workings and smell of the malting. We have since grown up to love drinking it too, from that first sneaky mouthful at age 3 (resulting in me being sick all over Granny's floor) to having whisky tasting nights with groups of friends and family, obviously we were older than 3 and above the legal drinking age of 18 here in Scotland

The beginning

Cofaidh Ceilidh has stemmed from an idea that our Founder Craig had. After travelling the East Coast of America whilst visiting his girlfriend (now wife), he tried the Rye Whiskey aged coffee and enjoyed it's complexity and unique Whiskey flavour. Upon his return to the Homeland, looking for something similar made with the famed Scottish Whisky, he could't find anything. Therefore, he started to create his own to share with family, friends and now you, our new found friends. This led to the creation of Cofaidh Ceilidh, a coffee gathering, if you will.
